1) Start with an amphora lined with beeswax and house-made olive oil. 2) Add native grapes (skins and stems, too) from 60-80 year old vines. 3) Ferment for about two weeks, stirring three or four times a day. 4) Keep the wine from oxidizing (no lid of course) by gently putting a layer of olive oil on top. 5) Bottle the wine from the small tap at the bottom of the amphora, letting the wine naturally filter through the skins and stems. Easy, right? You have to drink this wine to enjoy just how interesting and special it is. Stone fruit, hints of nuts, flinty, earthy, good acidity and maybe just a touch of olive oil?
