Hakkaisan Junmai Daiginjo Snow Aged 3 Years (Niigata, Japan)
Founded in 1922, Hakkaisan Brewery is nestled at the foot of Mt. Hakkai in Niigata, where the spring water that flows down from the mountain is used to produce its sake. One of the region’s other abundant resources is snow, which the brewery utilizes in the form of a Yukimuro - a natural refrigerator made of a large mound of snow covered with rice straw as insulation. This Junmai Daiginjo sake is aged in the Yukimuro for a minimum of 3 years! This slow fermentation and stable, very low temperatures tease out the rich flavors and textures of this sake.
