Here in Patrimonio, the northernmost appellation of Corsica, the soils are almost white they're so rich with limestone. At the Clos Marfisi estate, a 5th generation, organic-since-inception vineyard, 40-50 year old indigenous varietal vines thrive on the mineral-rich terroir.

In keeping with their father's wishes, brother and sister winemaking team continue to naturally ferment the Marfisi wines, allowing ambient yeast (read taste of place) to innoculate the crushed grapes. The wine is then aged in cement vats for 5 months, with only half the juice allowed to go into malolactic fermentation, and bottled unfiltered without unnecessary sulphur additions. The result is a lean, briny white wine with high-pitched citrus and tropical fruits (like pineapple!), herbal undertones (thyme), and a minerally finish.
