Cradled by high mountains on three sides, the rolling hills and fertile plains of Tikveš form the heart of Macedonia’s best known wine subdivision- and for good reason! Despite being one of Europe’s most arid zones, the unique combination of hot summers, near constant wind, and the cool clay soils help provide the right conditions for producing fresh, lean wines.
Zilavka (pronounced jhee-lahv-kah), is naturally high in acidity yet quick ripening, which when tended carefully makes for wines that are wonderfully rich yet bright and mineral. Layers of citrus and under-ripe stone fruit meet notes of white flowers and a zippy acidity, balanced beautifully by a hint of warm, ripe apricot and a lingering finish.
