Presque Isle Farm Co-Ferment: La Crescent Cider Presque Isle, Michigan 2021
From Presque Isle Farm "This cider started with the crushing of La Crescent white wine grapes. The must was wild fermented with native yeasts. After the initial phase of fermentation, a cider blend of heirloom, culinary, and wild foraged apples was added to finish fermentation on the skins of the La Crescent grapes. After fermentation was complete, the wine was pressed off of the skins and aged in French oak barrels and stainless steel tanks. This co-fermentation is reminiscent of orange wine with light acid, notes of fresh apple, honey, and flowery meadows.
This cider truly brings together natural wine and traditional cider making."
