Shannon Ridge Vineyards really takes sustainability to the next level- their vineyards are maintained via 'the ovis cycle.' If your latin is a little rusty, that means sheep. Their sheep graze throughout the vineyards, eating dry cover crops and fertilizing the soil, reducing the need for mowers, tractors, herbicides, and providing protection against wildfires and hilltop erosion!
We get dark fruit with notes of oak on the nose. On the palate, we get loads of rich brambly berry fruit with hints of spice, well integrated oak, and firm tannins, and a lovely subtle cranberry note that brings a pop of acidity to the mix. Give it about 30 minutes of air to soften those tannins a bit.
Food Pairings: Crown roast, prime rib, braised short ribs over creamy potatoes, seitan “chorizo'” tacos, hearty stew/soup, dark chocolate
