Shannon Ridge Vineyards really takes sustainability to the next level- their vineyards are maintained via 'the ovis cycle.' If your latin is a little rusty, that means sheep. Their sheep graze throughout the vineyards, eating dry cover crops and fertilizing the soil, reducing the need for mowers, tractors, herbicides, and providing protection against wildfires and hilltop erosion!
And, the vines seem to like having the sheep around. We get dark fruit with notes of oak on the nose. On the palate, we get loads of rich, dark fruit with hints of spice, well integrated oak, and firm tannins. Give it 45 minutes to an hour of air to soften the tannins a bit and to pull itself together.
Food Pairings: Crown roast, prime rib and the like, braised short ribs, seitan “chorizo'” tacos, hearty stew/soup (your choice of ingredients), dark chocolate
