Altos de Montanchez 'Vegas Altas' Bajo Velo' 2021 (Extremadura, Spain)
Juan Sojo and Ángel Luis González met while studying oenology together, Juan with more of a focus on science and Ángel with a background in agriculture. The two became fast friends and have been making wine together ever since. Following biodynamic principles and taking advantage of Extremadura’s unique climate, they produce exceptional varietal wines that show off the vast winemaking potential of an oft overlooked region.
This unfortified, "sherry-style" wine is made from a rare local grape called Eva de los Santos. The wine is aged "Bajo Velo" (under flor) in older oak casks for 277 days before being finished in cement tanks. Tastes like a softer nod towards a Manzanilla, with great acidity and a kiss of salinity on the finish.
Food Ideas: Fish tacos, jamon & nectarines with blue cheese, fried oysters, whole roasted red snapper with citrus & herbs
ABV: 12.5%
