Bulli 'Julius' Bolle Macerato Colli Piacentini Frizzante NV (Emilia-Romagna, Italy)
Bulli is located the northwest corner of Emilia-Romagna in the Colli Piacentini, a hilly area just south of Piacenza, squeezed between the Po river to the north and the Apennine mountains to the south. There’s a long tradition of making frizzante metodo ancestrale here, and Bulli has been doing it for five generations, since the late 1800’s.
This skin-contact sparkling is what the nonni (grandparents) used to call Bolle Macerato. Bolle is the often used slang abbreviation of bollincine, literally 'bubbles.' Rustically fizzy, pleasantly floral, with a juicy, lip-smacking acidity, this wine is made from the local grape Malvasia di Candia. The wine is macerated for 5 days on the skins, giving it a stunning orange hue.
Food Ideas: Fried zucchini blossoms stuffed with ricotta, Italian hero sandwich, crab cakes with remoulade, Thai green curry, citrus & avocado salad
