Dila O Saperavi 2020 (Telavi, Georgia)
As a teinturier grape (both skin and the flesh of the berry are red) Saperavi makes highly extractive wines. With concentrated color, tannin, and flavor. The cool temperatures of the underground qvevri (traditional Georgian clay pots used for fermentation and aging) preserve acidity and freshness.
We get stewed berry fruit on the nose, with a touch of spice and licorice. The palate carries a hint of sweet tobacco and sour cherry, with juicy acidity and a surprisingly lively finish or such a rich textured wine.
