Domaine Philemon 'La Croix d'Azal' Braucol Gaillac, France 2020
Coming to us from a 20 hectare, certified organic vineyard operated by the Vieules family since 1804, the ‘Croix d’Azal’ is a wonderful expression of Braucol- the named used in Gaillac for the Fer Servadou grape.
On the nose, we get earthy spice, herbs, and dark plum. On the palate, we get more of the same with dark berry fruit, black pepper, fennel seed, good acidity and minerality. Give 20-30 minutes to calm the tannins.
Food Ideas: Creamy mushroom pasta or soup, herb rubbed pork, lentils and roasted red peppers over quinoa, rouzole (bacon and ham pancakes)
