Ferdinando Principiano Serralunga Piedmont (Barolo) Italy 2020
The Serralunga region of Barolo is known for producing the meatiest, most robust versions of Nebbiolo. This producer however, having transitioned to natural winemaking in the early 2000s, breaks up the dense style with a mix of modern and traditional techniques. Wildflowers and fruit trees flourish among the rows of his vineyards, as well as a Koi fish pond he built for the local birds to enjoy. Now skip into the winery (whistling please) and you’ll find the grapes fermenting in whole clusters, inoculated by wild yeasts, and untouched by sulphur.
We get a bouquet of rose petals and eucalyptus, with an earthy palate full of forest fruit and medium tannins on the finish.
Food Ideas: wild mushroom pasta, root vegetables roasted in truffle butter, savory kabocha squash custard w/toasted nuts, rack of lamb
ABV: 13.5%
