In keeping with what one would expect from a natural wine cooperative, this 100 hectare (organic) property not only houses its 30 members, but also homestead-produces honey, charcuterie, cheese, foraged truffles, and orchard crops. There may also be drum circles.

But seriously, the Cortese grape (you may recognize from Gavi di Gavi) deserves all kinds of precious treatment in our book. It's one of the few varietals that seems magically able to be both refreshing and weighty at the same time. The Bianchino in particular sees no oak and isn't fined or filtered at the winery, so there's a lees-y mouthfeel zipped up by bright, fresh acidity. We get a slight flintiness on the nose, a little hay and raw beeswax, with zesty lime on the palate. Serve well chilled!
